My Chicken Meatballs

I am one of those that has a hard time following a recipe to the "t" so I don't fry my chicken meatballs. I bake them instead. This frees me up to do other things while they cook. Plus, I won't have grease/oil splattered all over my stove to clean up. The one pound of chicken made 36 one inch meatballs. These are GREAT and taste like chicken parmesan and is a great way to stretch your dollar and meat!















Here is the finished product (YUM!). I put them all in sandwich bags, twice. In other words I put what would fit in one bag and sealed. Then, took that bag and put inside another and sealed. Then put multiple bags inside a quart sized bag and stuck in the freezer.
